The onion crop is maturing. As each plant ripens, the top falls over. However, they don't all ripen at exactly the same time. So when a 'good amount' of plants are ready, the whole crop is rolled. It helps the onion begin the drying process. The roller is a four foot wide plastic drum. It can be filled with water to make it heavier. But for rolling onions, we leave it empty. I love this task. It has an elegant simplicity that appeals to me.

Rolling Onions
